Brewing this tea is always fun. After only a few seconds, the flowers begin to turn your water a vibrant cobalt blue. But add some citric acid (like lemon juice) and the blue colour will turn to a rich violet hue.
Organic Butterfly Pea Flower (Clitoria ternatea)
For the best brewing results, add a teaspoon of butterfly pea flower tea leaves for every 250ml of water. Allow the tea to infuse for about 5 minutes, until it becomes a rich blue colour. Once it reaches this point it’s best to remove the butterfly pea flowers and strain. Consume immediately, or chill in the fridge for 10 hours for a cold drink. Add lemon juice for a gorgeous violet drink.
